TAH-CHEEN

Translating to ‘bottom-spread’ this is an extremely delicious and very Persian dish. It is basically saffron rice that has been cooked with a hint of yogurt (which makes the rice stick together). Usually served in pieces (like a cake), it is crispy golden-brown on top and soft and fluffy on the bottom. Just under the crispy outside, there is a thin layer of rice followed by either seasoned chicken or beef and another layer of rice. The layered meat is where the dish gets its name (as it’s spread at the bottom before its flipped). The dish is usually topped off with sautéed sweet and barberries and if you’re lucky, pistachio chunks! Definitely don’t miss out on this one… Really!
